And I had driven by it at least 1,000+ times before I noticed it; odd. In good old Delano, MN, one can find none other than my street ;] - - ok, ok, I know it's not MY street, but I cannot find a back-story on it anywhere, so I'll just assume; either way, it's pretty amazing!
I also came upon a lovely place called, Kelseyville, CA a while back (check it out: here). Roadtrip, anyone?

Recipe: Shrimp Raspberry Feta Salad
As I type, I am in the process of making supper, and salivating, uncontrollably as I look at the photos (below), realizing that I'll need to cut this short, my apologies. I love salads, especially during garden season, but I find myself adding all sorts of goodies to make them heartier (so I'm hungry 3 hours later, instead of 2 ;]). My mom sent me home with a bunch of wild raspberries we have growing randomly around the farm: makes for a very refreshing, yet filling, combination.
Fresh lettuce - green leaf, romaine
Feta cheese
Raspberries
Croutons
Carrots
Celery
Red onion
Unthaw shrimp and remove the shells. Season and cook - I use kabobs, and put them on the grill for about 10 mins., to get somewhat of a crispy char. Croutons were made from a loaf of italian bread, from Rainbow ($2)...2 slices - pop in the toaster, butter, season with a bit of salt and pepper and cut to desired size.
On a bed of your favorite lettuce(s), scatter raspberries, shrimp, crumbled feta, croutons, chopped carrots, celery, red onion and, may I recommend, Newman's Own Poppyseed, salad dressing; a definite favorite of mine, light and refreshing and pairs well with fruit.

Seattle meets Litchfield
After a solid, seven year span, the Kieffers and Durkens were finally reunited. Fourth of July weekend was spent with one of the most amazing bunch ever, hanging out on the lake and enjoying the HOT weather! We always enjoy their visits and our families mesh SO well. I was totally bummed to see them go, but I wasn't as sad as usual, because we will be in their neck of the woods the second week in August! THRILLED is an understatement - and I finally got the go ahead from my new employer and the passport application is currently undergoing processing. One week. Seattle. Canada. Family bonding. Relaxation. Exploration. Fun. Epic. Cannot wait. Until then, JJB and I have mucho planning to do to ensure that we make the most of our 1] time together 2] time off 3] time in such a beautiful place. Until then, let's reminisce on some good times over the fourth:

New Job!
At the beginning of July, I started a new position as the Life Design Concierge at Love and Life Architects in Wayzata, MN - I could not be more thrilled. It's such a great fit, mostly because I agree 100% with everything they do and stand for, as a company. They have welcomed me with open arms into their family and I am already learning so much.
